Roasted Greek Style Potatoes

These potatoes are so addictive! Perfectly garlicky, lemony, creamy on the inside… and golden brown on the outside. They make for a nice accompaniment with any dinner.

Ingredients (Serves 4)

  • 4 Yukon gold medium sized potatoes
  • 1/3 cup of olive oil
  • 1/2 cup lemon juice
  • 2 Tablespoons oregano
  • 2 Tablespoons garlic, minced
  • 1 Tablespoon shallot, cut finely
  • Kosher salt to taste (in marinate)
  • Garnish: chopped parsley, sea salt and pepper

Preparation

  1. Cut the potatoes in similar wedge sizes and put in a baking dish or tray.
  2. Add the rest of the ingredients (except the parsley and sea salt) to the potatoes, mix together and let the potatoes marinate for an hour.
  3. Cover the baking dish or tray tightly with tinfoil and bake in a 375 degree oven for 1 hour.
  4. Remove from the oven and turn the oven up to 424 degrees. Remove the tinfoil cover and bake for an additional 20 minutes or until golden brown.
  5. Garnish with parsley and season with sea salt and pepper.
How to prepare greek style potatoes

Note: I usually cook with kosher salt not iodized or table salt. Kosher salt has wider, coarser grains than table salt. The wider grains salt food in a gentler way and enhances the flavour of foods instead of making them taste salty.

I use sea salt as a finishing salt because sea salt is harvested from the ocean and it has micro nutrients and adds other nice subtle flavours to your dish.

For example, in this recipe I put a pinch of kosher salt in the marinated potatoes and finish the dish with a pinch of sea salt.

Roast a Chicken to go with these lovely Potatoes

Roast Chicken Ingredients and Instructions: To make a Sunday dinner complete, roast a whole chicken while your preparing your potatoes and then place them in the oven during the final cooking time of the Chicken.

  • 3 to 5 lb. whole organic chicken
  • Herbs of your choice: oregano, thyme, parsley
  • 1 lemon, cut in half
  • 2 cloves of garlic
  • 1 small white onion, cut in half
  • 1 tablespoon olive oil or melted butter
  • Smoked paprika
  • Salt and Pepper

  1. Season inside the chicken cavity – put lemon, garlic, onion, herbs in the cavity.
  2. Wrap the chicken with butcher twine.
  3. Coat outside of chicken with oil or butter.
  4. Season outside of chicken with salt, pepper, paprika.
  5. Massage seasoning all over the chicken.
  6. Roast at 425 degrees for an hour or until an instant read thermometer reads 165 degrees. Enjoy!
