Prawn, Shrimp, or Gamba Kabobs

These lovely shrimp kabobs or skewers are so quick and simply delicious for any dinner.  I was recently in the Bahamas and I craved these every day.

In Canada, we call them Prawns, in the US they call them Shrimp and in Spain, they call them  Gambas..whatever you call them…enjoy!

I am now home and cooking up these beauties… they are so delicious!  Serve with a green salad or steamed rice and enjoy!

INGREDIENTS:

  • 1 1/2 pounds medium prawns, peeled and deveined
  • 2 lemons, thinly sliced and halved
  • 1 green pepper, cubed
  • 1 red onion,  cubed

Freshly ground black pepper, to taste

  • 1/2 cup olive oil
  • 1 tablespoon butter
  • 1/4 cup freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon chili flakes or to taste
  • 2 tablespoons chopped fresh parsley leaves

DIRECTIONS:

  1. Preheat oven to 450 degrees F or heat BBQ to medium-high heat.
  2. If baking then lightly oil a baking sheet.
  3. Thread prawns, lemon halves, onion, green pepper onto skewers. Place skewers on to the prepared baking sheet. Brush with half of the olive oil marinade mixture. Place on baking dish and into oven and roast just until pink, firm and cooked through about 5 or 6 minutes.
  4. If barbequing then place on grill for about 5 or 6 minutes, then marinade after they are removed from the BBQ.

Marinade mixture:

  1. In a saucepan add olive oil, butter, stir in lemon juice, garlic, oregano, thyme, chili flakes and basil, about 2 minutes; season with salt and pepper, to taste.
  2. Serve prawn skewers immediately, brushed with remaining olive oil mixture and garnished with parsley, if desired.
