Chocolate Dipped Peanut Butter and Date Truffles

You will not believe how amazingly quick and easy these truffles are to prepare and how delicious they taste! They are gluten free, vegan friendly and they do not have any added sugar.
Ingredients
- 1 cup soft pitted dates
- 3 tablespoons peanut butter* or other nut butter
- 1 teaspoon vanilla
- Dash of sea salt
- 1/4 cup (50 grams) 80% cocoa dark chocolate* (melted)
- 1 teaspoon unsalted butter (you can use avocado oil if you are vegan)
- Chia seeds for garnish
Preparation
- Start with soft dates, if you are using firm dates then soak the dates in water until they soften.
- In a food processor combine the dates, peanut butter, salt, and vanilla. Pulse approximately 15 times and then process until the filling forms a smooth paste.
- Put the mixture in the freezer for 5 minutes, then form into small balls.
- Place the date balls on a parchment lined cooking sheet and return to them to the freezer for 10 minutes.
- Melt the chocolate with butter.
- Using a toothpick, dip and roll the balls in the melted chocolate and place on the parchment paper lined cooking sheet.
- Garnish with chia seeds.
- Return the truffles to the freezer for 20 minutes.
- Remove the truffles from the freezer and store them in a sealed container in the refrigerator. Enjoy!

Note: This recipe makes approximately 15 small truffles.
*I use natural peanut butter which has no added sugar, preservatives or shortening
*I use organic fair-trade chocolate
