Healthy, Yummy Banana Bread

I don’t know if banana bread is still a thing, but it sure is in our household! I try to have healthy snacks around so that when the afternoon low hits, we’re not grabbing something packed with empty calories. My take on this is a healthier version with no sugar and I use coconut and almond flour as an alternative to gluten. I’d like to say this loaf lasts for a week, but in our house “M” has it gone in no time.

Ingredients

  • 1/2 cup organic coconut flour
  • 1/2 cup organic almond flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large organic eggs
  • 1 cup mashed ripe organic bananas
  • 1/3 cup olive oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dates
  • 1 teaspoon rolled oats (for topping)

Preparation

  1. Preheat your oven to 350 degrees F.
  2. Grease an 8 x 4 inch loaf pan.
  3. In a large bowl, combine flour, baking soda, salt, and cinnamon. Stir in the walnuts and dates.
  4. In a small bowl, whisk together eggs, bananas, oil, and vanilla.
  5. Pour the egg and banana mixture into the dry ingredients.
  6. Stir gently, until combined.
  7. Transfer the mixture to your prepared pan. Sprinkle with the rolled oats.
  8. Bake until a toothpick inserted in the center comes out clean. Approximately 40 minutes.
  9. Cool for 15 minutes before removing the loaf from your pan.

Variation

If you prefer to prepare this bread with gluten flour and sugar. Then substitute the coconut and almond flour for 1 cup of all-purpose baking flour and add 1/2 cup of brown sugar or honey to the egg mixture.

Other ideas: You can add blueberries, other nuts, chocolate bits, raisins. Anything you love and enjoy.

PS. This bread is also very yummy with a piece of old cheddar cheese for a late night snack.
