Three Amazing Salad Dressings

Salads, Salads, Salads!

It’s January and just after the holiday season I crave a fresh salad.   It’s such a great time to add more salads back in my diet and there are so many great winter salads that are quick, healthy and really make you feel energized.

Look what I had for lunch…..yum!

Salad Dressings

For me, the salad dressing makes (no pun intended ) the salad.   I never use store bought salad dressing… and once you try one of these quick and easy dressings that taste soooo delicious you will be converted to home made salad dressings…..just like me!

These three salad dressings are quick, they literally takes minutes to make, they are packed with  amazing flavours and are filled with healthy benefits!

 

Lemon Vinaigrette

Or as I call it “Memory of France Herbie Vinaigrette”

Ingredients

  • 1/4 cup apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1/2 cup extra virgin olive oil
  • Zest and juice of 1 lemon (about 4 tablespoons juice and 3 teaspoons zest)
  • 1 clove garlic, finely minced
  • 1 tablespoon freshly squeezed orange juice (I use this instead of adding raw sugar)
  • 1 teaspoon black pepper
  • 1 teaspoon herb de provence
  • 1/2 teaspoon flax seeds

Instructions

  1. Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.
  2. Refrigerate and let flavors blend for at least 2 hours, before serving.
  3. Store in refrigerator for up to 2 weeks.

 

Yogurt, Garlic, Salad Dressing

Or as I call it “Lucious Creamy, Garlicky  Dressing”

Ingredients

  • 1/2 cup whole milk plain Greek yogurt
  • 1 clove garlic, finely minced
  • 1/4 cup fresh minced parsley
  • 1/4 medium onion, diced (about 2 tablespoons)
  • 2 tablespoons fresh minced chives
  • 1 teaspoon black pepper
  • 2 teaspoons dijon mustard
  • Juice of 1/2 lemon (about 2 tablespoons)
  • 1/4 cup— milk or buttermilk

Instructions

  1. Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.
  2. Alternatively, you can combine all ingredients in a food processor or blender and pulse until well combined and smooth.
  3. Refrigerate and let flavors blend for at least 2 hours, before serving.
  4. Store in refrigerator for up to one week.

 

Sesame Ginger Salad Dressing

Or as I call it “My Favourite Asian Flavours Dressing”

Ingredients

  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon walnut oil
  • 2 tablespoons toasted sesame oil
  • 1/2 cup rice vinegar or apple cider vinegar
  • 1 clove garlic, finely minced
  • 2 tablespoons soy sauce
  • 2 tablespoon freshly squeezed orange juice (I use this instead of raw sugar)
  • 2 tablespoons peel and grated fresh ginger
  • 1 tablespoon sesame seeds

Instructions

  1. Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.
  2. Refrigerate and let flavors blend for at least 2 hours, before serving.
  3. Keep refrigerated for up to two weeks.
