Tuna Salad

I love tuna salad and most weeks I prepare a big bowl at the beginning of the week so that it is handy to serve as a quick lunch. My version is packed with so much flavour and you can serve it over greens or as a sandwich.
M went to the deli on his lunch break one day and they added a slice of cheddar cheese to his tuna sandwich. So that became a thing with us! I hope you like it.
Ingredients for Tuna Salad
- 2 (5-ounce) cans tuna packed in oil, drained
- 2 tablespoons mayonnaise, preferably Hellmann’s Olive oil
- Butter for spreading
- 3 tablespoons finely chopped celery or chopped granny smith apple
- 2 to 3 tablespoons finely chopped onion
- 3 cornichons, finely chopped
- 1 tablespoon capers, rinsed, patted dry, and chopped
- 5 large green olives, pitted and chopped
- Fresh lemon juice
- Freshly ground pepper
- 1 to 2 tablespoons minced fresh chives or parsley
- Romaine lettuce or your favourite greens
Ingredients for Tuna Salad Sandwiches
- Tuna Salad
- 4 slices multi-grain bread or 2 English muffins
- 4 slices lettuce
- 4 – 8 slices of tomato
- 4 slices onion
- 1/2 avocado
- 4 slices cheddar cheese
Preparation for Tuna Salad
- Using a fork, mash the tuna with mayonnaise. Add the celery, chopped onion, cornichons, capers, olives, and toss to combine. Add a squirt of lemon juice and pepper. Taste and see if you’d like more mayo, onion, or cornichons.
- Add more lemon juice and pepper to taste. Stir in the chives and parsley. (Makes 1 1/2 cups.) The tuna salad is good to go as soon as it’s made, but it’s even better after a couple of hours in the fridge.
- If you’re serving this as a salad, simply spoon over your favourite greens.
Preparation for Tuna Salad Sandwiches
- If you’re using English muffins make open-face sandwiches. Butter the muffins with butter and avocado, add a leaf of lettuce on each muffin and top with tuna salad, and finish with tomato and onion.
- If you’re using sliced bread, prepare traditional sandwiches: (Makes two sandwiches)
Assemble: Top 2 slices of bread with butter, avocado, 1 piece of lettuce, tomato, and onion, then spread the tuna on top and finish with a slice of lettuce, tomato, onion, and cheese. Top with a slice of buttered bread.
