Muffuletta Sandwiches

If you’re going on a picnic, going to the beach or going out on a boat take along these decadent Muffuletta Sandwiches. You won’t believe how tasty they are!

Ingredients

  • Olive Salad (recipe below)
  • 4 Ciabatta rolls
  • 200g Hot Capicola
  • 200g Mortadella
  • 200g Ham
  • 300g Provolone cheese – sliced
  • 300g Mozzarella cheese – sliced

Preparation

  1. Prepare the Olive Salad
  2. Cut the ciabatta rolls in half
  3. Butter each half with Olive Salad (recipe below)
  4. Top each half with capicola, mortadella, ham, provolone, mozzarella
  5. Top one half with another layer of Olive Salad
  6. Put sandwich halves together, wrap very tightly in plastic wrap.
  7. Put something heavy on the sandwiches to squish them down and put them in the fridge either over night or a couple hours before your lunch.

Olive Salad Ingredients

  • 1 cup chopped kalamata olives
  • 2 cup chopped cerignola olives
  • 2 tbsp. chopped capers
  • 1 clove of garlic crushed
  • 2 tbsp. chopped red pimento
  • 1 tsp. oregano
  • 1 tbsp olive oil
  • 1 tsp. red wine vinegar

Olive Salad Preparation

  1. Chop olives, capers and pimento.
  2. Mix all the ingredients together. Mix well.
