Muffuletta Sandwiches

If you’re going on a picnic, going to the beach or going out on a boat take along these decadent Muffuletta Sandwiches. You won’t believe how tasty they are!
Ingredients
- Olive Salad (recipe below)
- 4 Ciabatta rolls
- 200g Hot Capicola
- 200g Mortadella
- 200g Ham
- 300g Provolone cheese – sliced
- 300g Mozzarella cheese – sliced
Preparation
- Prepare the Olive Salad
- Cut the ciabatta rolls in half
- Butter each half with Olive Salad (recipe below)
- Top each half with capicola, mortadella, ham, provolone, mozzarella
- Top one half with another layer of Olive Salad
- Put sandwich halves together, wrap very tightly in plastic wrap.
- Put something heavy on the sandwiches to squish them down and put them in the fridge either over night or a couple hours before your lunch.

Olive Salad Ingredients
- 1 cup chopped kalamata olives
- 2 cup chopped cerignola olives
- 2 tbsp. chopped capers
- 1 clove of garlic crushed
- 2 tbsp. chopped red pimento
- 1 tsp. oregano
- 1 tbsp olive oil
- 1 tsp. red wine vinegar
Olive Salad Preparation
- Chop olives, capers and pimento.
- Mix all the ingredients together. Mix well.
